Mini meatloaf with lime veg and Cajun chips

It sounded so good. The best pork mince combined with a hit of spice, seasoning and breadcrumbs. Sauteed veg complete with grated garlic and lime juice. Crispy chips with a coating of Cajun spice. 

In reality, the chips didn’t crisp, the meatloaf was dry and the vegetables provided the only silver lining. But I had so much fun. Spending time in the Nook, throwing ingredients into the pan, trying things, making notes for improvement and tasting, of course. It provided nourishment and a hearty meal, but I probably won’t add it to my regular repetoire. Maybe I’ll try again with the same base ingredients, but different spice combinations and perhaps a sauce of some kind – any suggestions?

All dinners are improved by a smart cocktail. Vodka, lime and lemonade. Refreshing.
