Tray bake salmon (GF)

I love salmon, it’s an all round good ingredient with ample health benefits. Teamed with plenty of veg, this made a light supper with which we could christen our new table.

 
 

Tray bake salmon

Serves 2 

Ingredients:

1/2 lemon, cut into wedges

1 small red pepper, cut into chunks

as many Anya potatoes as your appetite demands

sunflower oil

salt and pepper

2 salmon fillets

appropriate side salad
1) Preheat the oven to 200C. Toss the lemon wedges, red pepper chunks and potatoes in a small amount of oil and seasoning. Scatter in a large roasting tray. Roast for 25mins.

2) Stir the mixture, then add the two salmon fillets on top, drizzling with a little oil and seasoning. Return to the oven and bake for a further ten minutes. Prepare a side salad using all the greenery you care for.

3) Serve and enjoy, although we didn’t eat the roasted lemon, you might like that sort of thing.
