Friday Night Recipe: Turkey Meatballs

Welcome to the first in a series of new posts. I’m hoping to post a recipe every week on a Friday, so if it tickles your tastebuds, you’ve got a whole weekend to get stuck in and report back, I do like our catch ups. So without further ado . . .

Turkey mince, lean and clean and so good rolled into balls and covered in a smooth onion and red pepper tomatoey sauce. Mmm.

Turkey Meatballs in a Tomato and Red Pepper sauce:

Serves 2


250g lean turkey mince

2tbsp gluten free breadcrumbs

1tbsp chopped onion (I just cut a hunk off my medium onion, and finely chopped that)

1 small garlic clove, grated

dried basil

dried oregano

sunflower oil

salt and pepper

1 red pepper, finely sliced

rest of the previous onion, choppped

1 carton chopped tomatoes



1) Heat a drizzle of sunflower oil in a large pan. Add the pepper and onion and sautee on a gentle heat until soft.

2) Meanwhile, mix the turkey mince, chopped onion, breadcrumbs, garlic, herbs and seasoning together in a bowl, with your hands is preferable. Roll out into as many similar-sized balls as you can.

3) Add the meatballs to the pan, increase the heat slightly and saute until fully cooked.

4) Pour over the chopped tomatoes, scatter over a little more basil and seasoning, then simmer whilst you cook your pasta.
