I just posted a photo of these gorgeous banana pancakes on Instagram and I had some lovely requests for the recipe. So here it is!
Serves One (makes three thick pancakes)
50g porridge oats
1 ripe banana, chopped
20g brown rice flour
150ml milk (you can use plant-based or regular)
Butter or coconut oil
1) Add the oats, flour and half the banana to a bowl and mix. Add the milk and stir briskly until a batter forms, then transfer to a jug.
2) Heat your butter or coconut oil in a frying pan over a high heat. Pour in the batter into the centre of the pan and spread a little with your spatula. These pancakes are quite delicate, so you need to be firm with the spatula when it’s time to flip. No hesitation!
3) Repeat with the other batter and layer on a plate, adding a little honey between each layer. Fry the other half of the banana in the pan to caramelise on each side. Add to the pancake stack, drizzle with honey and serve.
